Ham & Cheese Casserole
Today I'm sharing a recipe that I love because not only do the kids love it and gobble it up, but it helps me to use up some of the Easter ham leftovers. I originally got this recipe from my Mother-in-Law, The Barefoot Contessa.
When I'm putting my ham away in a leftover container, I usually cut about four cups or so up into small cubes and store them in one cup size containers, like this.
Then I toss them in the freezer and there they stay until I need them.
I don't even bother thawing the ham out when I'm ready to use it. I just plop it in my casserole and it has plenty of time to defrost and heat up in the oven.
Doesn't it look yummy? It's basically fancy mac and cheese with ham. But instead of macaroni noodles you use the smallish curly egg noodles.
We had it for dinner tonight with our leftover green beans and rolls from last night. It's an easy dinner. What's not to love?

Just wanted to say happy birthday to annie! Tomorrows her birthday, i remembered! Let her know cousin felicia says happy birthday and gives hugs, i believe shes 6 now right!?!?

ReplyDeleteI love your idea of using masking tape to mark leftovers. What's your secret on storing containers and matching lids so the correct lids are easy to find? This idea can also work for storage food for the freezer? I've cleaned out my son's freezer twice and I think I have finally got him to mark what the item is/date he bought it or put it in freezer. This last time, there was so much stuff I forced him to discard to the dump, for fear of not knowing how old it was. Since there is just hubby and I, the 1 c. containers would be ideal for leftovers. We won't heat up/eat anything that's over 3 days old.
