Okay, I know that this makes two recipes in a row, and it's not my usual routine, but I'm just crazy busy right now so I wanted to get something up. I'm working hard on a little tutorial to post with the winner for tomorrow's Spring Cleaning Giveaway.
Not everyone likes fish tacos, but Peanut Head and I happen to love them. In fact, it's just about the only way that Peanut Head will eat fish.
We generally use these frozen fillets because they're fast, but you could use any kind of fish you want. For example, you might want to make these a little healthier with fresh fish that hasn't been breaded within an inch of it's life.
Also, this picture shows the fillets on a cookie sheet with parchment paper, but I really recommend cooking them on a broiler pan so the extra grease drains away from the fish.

I've seen many recipes for fish tacos but have never brought myself to eat them. There's just something fishy about them. LOL I kill myself. Anyway, using the breaded fillets like that makes them sound better. Maybe we will have to try it.

ReplyDeleteI absolutely LOVE fish tacos -- and I even think they're in my diet! There's a restaurant at the end of the pier in Imperial Beach, CA (south of San Diego) that has the best fish tacos in the world. I dream about those fish tacos...

ReplyDeleteI love fish tacos so much! Lucky for me I live in Southern California which is not too far from Baja...where the fish taco was invented! So I get to eat a lot of them However, I would much rather make my own but have yet to find a good recipe. Looking forward to trying this!
